So you know when you get a craving for a nice tasty treat? Your mouth starts to water and you can almost taste the goodness, but then you start thinking about how those treats are full of sugar or gluten and those delicious treats are no longer on the menu. But we’ve got a recipe for the best brownie ever, and as an added bonus it’s healthy. No sugar, flour, or gluten, and full of healthy fats. Here’s how you do it (and yes you will need a kitchen scale for this recipe).

INGREDIENTS

  • 6 Eggs
  • 160 Grams of Unsalted Grassfed Butter
  • 120 Grams of Goat Cheese
  • 60 Grams Unsweetened Organic Cocoa Powder
  • 2 Tsp Organic Raw Vanilla Bean Powder
  • 1 Tsp Primal Herb’s Chaga Mushroom
  • 125 Grams of Xylitol
  • 1/2 Tsp Baking Powder

DIRECTIONS

Step 1: Start by preheating the oven to 350 degrees.

Step 2: Take the 6 Eggs and put them into a mixer. You’ll want to work your way up to the highest speed and let it whip those eggs for about 10 minutes. For me personally, I get the eggs started then begin prepping the rest of the ingredients just to make good use of my time. Now if you’re making this you probably want it to be as healthy as possible. Cause what’s the point of making a healthy treat if you’re still going to cut corners right? With that in mind, I use organic eggs from cage-free chickens.

Step 3: Once the eggs are fluffy it’s time to start adding the rest of the ingredients. The first of which is the Unsalted Butter. Again, if you’re making a healthy treat why not go all the way healthy? I personally use butter that comes from 100% grass-fed cows. The butter alone tastes great and is good for you.

Step 4: Now you want to add the Goat Cheese. The original recipe it called for cream cheese, which worked wonderfully I might add, but I wanted to optimize it. When you compare cream cheese and goat cheese as far as their nutritional values you find that goat cheese has twice as much protein, has fewer calories, and it’s easier to digest. When we first tried the goat cheese in the brownie I thought the taste would be off cause of its very strong taste. Much to my surprise, I couldn’t tell the difference. With being as healthy as possible in mind, I recommend goat cheese from grass-fed goats.

Step 5: So we added what’s going to make these brownies moist and the perfect texture, now it’s time to add what will give it that rich chocolate taste. Add the Unsweetened Organic Cocoa Powder.

Step 6: For me, vanilla goes hand in hand with chocolate. It gives it a more complete and silky taste. So now add the Organic Raw Vanilla Bean Powder.

Step 7: Okay, now to make this brownie even more healthy I add our Primal Herb Chaga Mushroom Extract to the mix. I use Chaga cause it’s about the same consistency of the cocoa powder and mixes extremely well. However, the health bonuses are the main reason I do it. Chaga is known as a strong antioxidant that supports your liver and strengthens your immune system by aiding in antibacterial, antifungal, and antiviral functions. Which goes along perfectly with making this brownie super healthy.

Step 8: It’s time to add a natural sweetener to these brownies. I personally prefer Xylitol, but feel free to experiment with your favorite natural sweetener.

Step 9: And the last thing to add is the Baking Powder. Then start the mixer back up and let it mix for around 5 minutes.

Step 10: Once all the ingredients are fully mixed it’s time to grab a baking dish. I line mine with parchment paper to keep it from sticking, and it works great. Once you have it all poured into the lined dish you place it in the oven and let it cook for about 40-45 minutes. The best way to know when it’s done is to do the toothpick test in the center. If it comes out clean then it’s time to get your brownies out of the oven.

Step 11: Now when you pull it out it will look all nice like a big cake at first, and technically you can start eating it right away. But who wants to burn their mouth on a super hot brownie right out of the oven? I like to let it cool for at least 40 minutes. As it cools you will notice that the brownie will start to “collapse” to about half the size. Don’t worry it’s supposed to do that. The result is a very dense, moist, and rich chocolate brownie. And again the best part is that it not only tastes amazing, but it’s also totally healthy.
